High Fiber Chocolate Chip Cookies Recipe

If there’s one thing we can count on…it’s us...wanting something sweet after every meal. So when we started to try our fiber blend with different recipes, you know we had to go right to a classic. 

Chocolate Chip Cookies

These cookies turned out soft, chocolatey, and honestly could have passed for a breakfast treat (they did for us). We used coconut sugar and dark chocolate chips for the richest flavor but do your thing and substitute whatever you’d like.

So, here’s our version of freshly baked chocolate chips cookies with our Fiber + Prebiotics blend. 

What you’ll need:

¾ cup of almond flour 
¾ cup of oat flour
2 tbsps of Clear Digestive Fiber + Prebiotics
½ tsp of baking powder
½ tsp of baking soda
¼ tsp of salt
¾ cup of coconut sugar
¾ cup of dark chocolate chips
5 tbsps of melted butter, oil, or vegan butter
¼ cup of almond milk
3 tbsp of maple syrup
1 tsp of vanilla extract

How to make: 

Preheat your oven to 350 degrees. Line a baking sheet with parchment paper (or grease it so that your cookies don’t stick). Start by adding the flours, fiber, baking soda, baking powder, and salt to a bowl. Use a whisk to mix well. Then in a separate bowl, add butter/oil and coconut sugar and mix together. Add the rest of your wet ingredients to your sugar and stir until it's well combined.

Now, add your wet ingredients to your flour mixture and mix them together with a spatula. Once batter forms, add your dark chocolate chips and mix again. Place about 1 heaping tbsp of cookie batter onto your baking sheet and bake for 12-15 minutes. Once they’re done, allow them to cool for about 10 minutes. Enjoy - we hope you love them, muah!
